We tested our Farm to School Garden Salad at Santa Fe High School this week. It’s a great salad concept with a base of lettuce and then a half cup of various garden-fresh additions. This allows us to make good use of school garden produce as well as seasonal specials from local farms. This week’s salad tasting included carrots, snow peas, and edible flowers. We used the yummy citrus salad dressing developed for the kale salad.
We are looking forward to more pop-up salad bars at the high school’s next year. Our students will be ready for the seasonal sides!
