Sweet & Tender Kale Salad Recipe, Ingredients: 2 bunches of curly kale leaves (removed from stem and approximately 1.5 pounds), 1 red apple with peel, 1/2 cup orange juice, 1/4 cup vegetable oil, 1/4 cup white vinegar, 3/4 teaspoon salt, 1/4 cup dried cranberries, 1/4 cup sunflower seeds, 2 teaspoons sugar. Directions: Wash kale. Remove leaves from stems. Tear leaves into bite-sized pieces. Dice apple with skin still on. Set aside 1/4 cup orange juice in small bowl. Add diced apple and stir to coat with orange juice. Pour oil and remaining 1/4 cup orange juice over kale. Massage kale by rubbing between fingers and squeezing until kale volume is reduced by nearly half (3-4 minutes). Add apple and orange juice mixture. Add cranberries and sunflower seeds. Make dressing by shaking together the vinegar, salt, and sugar. Pour the dressing over kale. This recipe yields 6 one-cup servings. Note; Refrigerating prepared salad for several hours before serving helps the kale become even more tender. Add sunflower seeds right before serving. Enjoy!
